At 300 meters above sea level (1,000 feet), at the eastern edge of the Chianti Classico region lays the original site of the winery in a location known for centuries as Carpineto. Today this estate hosts the administrative and winemaking headquarters for the company. The buildings are surrounded by 8 hectares (20 acres) of dry farmed Chianti Classico vineyards planted on steep hillsides to Sangiovese and Canaiolo grapes.
Within a modern complex of multi-level buildings there are dozens of stainless steel, temperature controlled storage and fermentation tanks, sparkling wine production equipment as well as presses, and bottling equipment of the latest generation. Below the refrigerated finished goods warehouse there is a large aging cellar excavated below the valley floor. At a naturally constant temperature of 15-17°C (58-62°F), this is Carpineto’s bottle aging cellar where at any given time about one million bottles of wine lay aging for a period ranging from 4/6 months to over 2 ½ years before release. Next to this bottle aging cellar, still underground, is the barrel room that holds about 1,000 barrels.
