The new plantations have a density varying from 3,500 to 5,000 plants per hectare.
Pruning is at low "cordone speronato" and the quantity of grapes is controlled not exceeding 2 Kg.
"Sangiovese" is the variety representing 95% of the grown grapes, followed by "Merlot" and a very small quantity of Tuscan "Trebbiano"The cellars are in an underground environment, conditioned with constant temperature and humidity.
All the wines are aged in small French oak barriques for 1 to 4 years and refined in bottles for at least one year.
Distillates are made from non-squeezed dregs of pressed grapes, which, collected in steel containers are immediately sent to the distillery where distillation is made by steam discontinuous method.
